Objectives:Train Food Business Operators (FBOs) Group B – Perishable food handlers, in the presence of specific risks for food subject to a controlled temperature regime including transport; in accordance with the programmes and directories of D.G.R. UMBRIA 208/2021.
Expected results:Operators of the food sector (OSA) Group B, are able to carry out the the handling of perishable food, in the presence of specific risks for food subject to controlled temperature regime including transport according to the principles of food safety.
Educational Units:CFU 1 – FBO Basic Training Category B (10h)
– UC01 – Concepts of microbiology;
– UC02 – Good Processing Practices:
– UC03 – HACCP principles and methodologies, Corporate self-control procedures, sanitisation and risk analysis;
– UC04 – Foodborne diseases;
– UC05 – Food traceability and tracing;
– UC06 – The legal framework governing food safety and food hygiene.
